Spinach pancakes

Start your weekend with a stack of protein-rich spinach pancakes with fried apple. Deliciously luxurious! You can also choose to make these protein-rich pancakes on Sunday, so you have a tasty snack for the rest of the week. These spinach pancakes are just as delicious when cold. By adding vegetables to sweet baked goods, you make the dish much more nutritious. Spinach is perfect for that.

Ingredients (for 8 pancakes)

  • 2 tablespoons of chia seeds (+6 tablespoons of water)
  • 2 scoops of Orangefit Protein vanilla
  • 1 ripe banana
  • 150 grams of oats (ground into flour)
  • 300 ml of unsweetened plant-based milk (like unsweetened almond milk)
  • 1 teaspoon of baking powder
  • 2 to 3 handfuls of spinach leaves
  • 1 apple
  • 1 teaspoon of cinnamon
  • pinch of salt
  • coconut oil

Instructions

  1. Mix the chia seeds with the water and let it sit for 10 minutes.
  2. Mash the banana and blend it with the spinach, 150 ml of plant-based milk, and the chia seed mixture until smooth in a blender.
  3. Ground the oats (if necessary) into a fine powder.
  4. Mix all the dry ingredients together, then add the contents of the blender. While stirring, add another 150 ml of plant-based milk or water.
  5. Melt a bit of coconut oil in a frying pan over medium heat and scoop 1/8 of the batter into the pan. Cook for about 3 to 4 minutes until the top is set.
  6. Flip the pancake and cook for another 3 to 4 minutes. Repeat until all the pancake batter is used up.
  7. Meanwhile, slice the apple and sprinkle with a pinch of cinnamon.
  8. Heat a bit of coconut oil in a separate frying pan and cook the apple over low heat until golden and soft.
  9. Serve the spinach pancakes while they're still warm.
