Apple ring pancakes

Today, we're having healthy pancakes for breakfast! An extra little celebration to start the day, right?

Ingredients (8 pieces)

  • 1 apple
  • 1 tbsp chia seeds
  • 1/2 ripe banana
  • 60 grams oatmeal flour (Tip: grind oat flakes to make oatmeal flour)
  • 170 ml almond milk
  • 1 tsp cinnamon
  • 1/2 tsp gingerbread spices
  • 1 scoop of Orangefit Vanilla Protein
  • 1 tsp baking powder
  • a pinch of salt
  • coconut oil
  • kitchen paper

Instructions

1.Let 1 tbsp of chia seeds soak in 4 tbsp of water for 10 minutes.

2. Peel the apple, remove the core, and slice the apple (horizontally) into slices about 0.5 cm thick.

4. Mix oatmeal flour, soaked chia seeds, Orangefit Protein, half a mashed banana, a pinch of salt, cinnamon, gingerbread spices, baking powder, and almond milk together and blend until smooth.

5. Heat a bit of coconut oil in a frying pan (medium-high heat).

6. Now, dip the apple rings one by one into the batter and place them directly in the pan. Spoon about 2 tbsp of pancake mix on top of each so the pancakes become a bit larger and thicker.

7. When the batter is golden brown on the bottom and mostly set on top (about 10 minutes), flip the rings and repeat the process. (Tip: Don't cook the pancakes on too high heat, or the bottom will burn quickly).

8. Serve the pancakes while they're still nice and warm! With fresh fruit or extra cinnamon, perhaps?
