Blueberry pancakes
We've got something delicious for you to chef up. Blueberry pancakes! With some fruit or yogurt, it's an irresistible combo.
Tip: Make some extra of these pancakes so you can store them in the fridge. They're also really tasty when cold, making them an ideal healthy protein-rich snack to go.
Instructions
- Let the chia seeds soak in lukewarm water for about 10 minutes.
- If necessary, pulverize the oatmeal into flour.
- Combine all the dry ingredients and mix them together. Mash the banana and add it to the dry ingredients along with the plant-based milk, soaked chia seeds, and water.
- Use a fork to mix all the ingredients until a thick pancake batter forms.
- Carefully fold in the blueberries.
- Melt some coconut oil in a non-stick frying pan over medium heat.
- Scoop the batter into the pan and cook the pancakes for about 5-7 minutes on each side. Flip them when the batter on the top side of the pancake is dry.
- Tip: If the batter becomes too dry, it's because the oats are absorbing the moisture. Just add some extra water to make it easier to scoop the batter into the pan.
- The pancakes are ready when they have a nice golden brown color on both sides.
- Ready to serve!
