Pancakes with Greens

Everybody loves pancakes! Do you prefer to eat them in a healthy way? Then we have the perfect recipe for you. And with the addition of a scoop of green juice, you're doing even better: that way, you're getting 30% of your daily vitamin needs right away!

Ingredients (for 1 serving)

  • 50 grams of finely ground oat flakes
  • 125 ml of soy milk
  • 1 banana
  • ½ teaspoon of cinnamon powder
  • 1 scoop of green juice
  • Olive oil or coconut oil

Instructions

  1. Grind the oat flakes into flour using the blender attachment of a hand blender.
  2. Add soy milk, banana, cinnamon powder, and a scoop of green juice to the flour. Blend everything into a smooth pancake batter using a hand blender or blender.
  3. Put a little oil in a pan and heat it over medium-high heat. Add the batter. Are you making a stack of small pancakes or one large pancake? Flip them after a few minutes so both sides cook evenly.
  4. Place the pancake(s) on a plate.
  5. Optional: add extra flavor with toppings! Some soy yogurt or fresh fruit, for example.
  6. Enjoy your meal!
