Speculaas pancakes
Protein-rich speculaas pancakes! These speculaas pancakes are easy to make and you can also take them with you the next day (cold) as a tasty snack.
Are you also starting your weekend with a stack of warm speculaas pancakes? We are.
We'd also be happy to explain how you can make them at home yourself. Are you reading along?
Instructions
1. Add 3 tbsp of water to 1 tbsp of ground flaxseed and let it sit for 10 minutes.
2. Mash the banana.
3. Then, mix all the other ingredients together. You can do this with a fork or using a food processor (for a smoother batter).
4. Heat a small amount of coconut oil over low heat in a non-stick frying pan.
5. Spoon about 1/5 of the batter into the frying pan.
6. Swirl the pan a bit to spread the batter, or you can do this gently with a ladle.
7. Let it cook for 3 minutes (until the top has dried) and then carefully flip the speculaas pancake.
8. Cook the other side of the pancake for about 2 minutes.
9. Repeat this process until all the batter is used up.
10. Serve the speculaas pancakes while they are still warm with a little extra cinnamon or speculaas spices.
