Subtly savory parsnip and apple soup
Homemade soup is your go-to lunch this season: deliciously warming and super nutritious at the same time. This variation is subtly savory yet also sweet.
The lentils make the soup protein-rich, and you can also choose to add two scoops of Orangefit Greens at the end. It's like a warm hug in the form of soup.

Instructions
- Heat about 1 tbsp of olive oil in a deep pan and sauté the chopped onion for about 5 minutes over medium heat.
- Peel and cut both the apple and parsnip into small pieces. Add them to the pan along with a pinch of salt and pepper.
- Next, add the garam masala and cumin powder. Stir well and let it cook for another 3-4 minutes.
- Pour 500 ml of vegetable broth into the pan, stir, and reduce the heat. Cover the pan and let it simmer for 25 minutes. Turn off the heat and add the rinsed lentils and 200 ml of broth. Use an immersion blender to blend until smooth. Optional: Add the 2 scoops of Greens at this step.
Taste to check if everything is seasoned to your liking. If not, you can add an extra pinch of pepper or salt. Transfer the soup to two large bowls and sprinkle roasted pumpkin seeds on top.
