Instructions
-
Preheat the oven to 175 degrees.
-
Let the dates soak in hot water for 10 minutes. Then, drain them and mash the dates as finely as possible with a fork. Tip: Pour a bit of hot water while mashing to form a sticky mixture.
-
Chop the chocolate and nuts into very fine pieces and mix them with the rest of the dry ingredients.
-
Then, add the melted coconut oil, plant-based milk, and date puree. Knead this mixture well with your hands.
-
Now, divide the cookie dough into 10 portions and shape each portion individually into compact little balls.
-
Line a baking sheet with parchment paper and place the dough balls on top.
-
Use the bottom of a spoon to gently press down on the balls, flattening them halfway. This gives the cookies their shape.
-
Place the baking sheet in the oven for 20 minutes.
-
Allow the chocolate cookies to cool a bit first; this will make them nice and crunchy.
-
Store the cookies in a sealed container, as this will keep them extra tasty for a longer time!
