Easy protein-rich Christmas cookies

These easy Christmas cookies are perfect for the holiday season. Everyone will undoubtedly enjoy them! And the best part is, they're high in protein too ;-). We can't make the holidays any more festive, but we can make them more protein-rich.

For decorating these easy Christmas cookies, you can go all out. Sprinkle the Christmas cookies just like we did with dried coconut flakes for a wintery effect. Or go for colorful and playful decorations, it's fun to do with kids too.

Did you know that these cookies can be in the oven in just 7 steps? So, they're ready in no time. You can also store the cookies for 2 to 3 days, so it's nice to keep some on hand for when you have guests!  

Ingredients for 10-12 cookies

  • 125 grams of oatmeal flour
  • 1 ½ scoops of Orangefit Protein
  • 75 grams of coconut oil
  • 2 tablespoons of agave syrup
  • 15 grams of chia seeds
  • 100 grams of 70% dark chocolate
  • ½ teaspoon of baking powder
  • 1 teaspoon of cinnamon + ½ teaspoon of gingerbread spices
  • 1 tablespoon of grated coconut
  • A pinch of salt

Instructions

  1. Preheat the oven to 200 degrees Celsius in advance.
  2. Line a baking sheet with a sheet of parchment paper.
  3. Mix the flaxseed with about 6 tablespoons of water and let it sit for a bit.
  4. Take a large bowl and add all the dry ingredients to it, mix them together.
  5. Do the same with the coconut oil (it doesn't need to be melted) and agave syrup in a small bowl. Finally, add the soaked chia seeds.
  6. Pour the wet mixture into the dry ingredients and knead the ingredients together by hand until you have a rough batter. Eventually, form it into a large ball.
  7. The next step is important: cover the dough and place it in the refrigerator for about 15 minutes.
  8. Ready? Roll out the dough with a rolling pin and use a cookie cutter to create 10 to 12 cookies.
  9. Place the cookies on the baking sheet and bake them in the oven for about 10 minutes.
  10. Let them cool, then decorate them with melted chocolate and sprinkle grated coconut on top.
  11. Let the chocolate harden, and they're ready to serve!
