Easy protein-rich Christmas cookies
These easy Christmas cookies are perfect for the holiday season. Everyone will undoubtedly enjoy them! And the best part is, they're high in protein too ;-). We can't make the holidays any more festive, but we can make them more protein-rich.
For decorating these easy Christmas cookies, you can go all out. Sprinkle the Christmas cookies just like we did with dried coconut flakes for a wintery effect. Or go for colorful and playful decorations, it's fun to do with kids too.

Instructions
- Preheat the oven to 200 degrees Celsius in advance.
- Line a baking sheet with a sheet of parchment paper.
- Mix the flaxseed with about 6 tablespoons of water and let it sit for a bit.
- Take a large bowl and add all the dry ingredients to it, mix them together.
- Do the same with the coconut oil (it doesn't need to be melted) and agave syrup in a small bowl. Finally, add the soaked chia seeds.
- Pour the wet mixture into the dry ingredients and knead the ingredients together by hand until you have a rough batter. Eventually, form it into a large ball.
- The next step is important: cover the dough and place it in the refrigerator for about 15 minutes.
- Ready? Roll out the dough with a rolling pin and use a cookie cutter to create 10 to 12 cookies.
- Place the cookies on the baking sheet and bake them in the oven for about 10 minutes.
- Let them cool, then decorate them with melted chocolate and sprinkle grated coconut on top.
- Let the chocolate harden, and they're ready to serve!
