Healthy peach muffins with extra protein

Instructions

Preheat the oven to 180 degrees Celsius.

Mix 3 tbsp of ground flaxseed with 9 tbsp of water and let it sit for 10 minutes. This will be used as an egg replacement in baking recipes.

Peel and chop the apple. Cook it on low heat for 10 minutes until the apple is very soft.

Remove the pan from the heat and mash the pieces of apple.

Wash the peaches, remove the pit, and cut them into small pieces.

Chop the pecans into smaller pieces.

Mix all the ingredients together and stir well. Use a fork for this.

Grease the muffin tin with a little extra melted coconut oil.

Fill each muffin cup about 3/4 full with the peach muffin batter.

Place the healthy muffins in the oven for 45 to 50 minutes.

Allow the peach muffins to cool well after baking.
