No-bake Blueberry Granola Bars
Granola bars are definitely a favorite for us when it comes to healthy snacks. Having a healthy granola bar as a snack can give you that extra bit of energy. It's an ideal snack for when you're planning to hit the gym or need to power through a bit more at work.
These blueberry granola bars are packed with protein and incredibly easy to make. For this 'no-bake' recipe, you don't even need an oven. Even if you have little time to spend in the kitchen, making these blueberry granola bars is definitely doable. It's nice, isn't it, to take along such a flavorful granola bar on the go?
Instructions

Remove the pits from the dates and soak them in hot water for 10 minutes.

Meanwhile, chop the mixed nuts into small pieces and add them to a large bowl along with the oats, protein powder, seeds, a pinch of salt, and cinnamon.

Mix all the dry ingredients together.

Drain the dates and then puree them together with the blueberries and melted coconut oil until you have a sticky mixture. (This is easiest with a food processor, but with a bit more patience, it can also be done with a fork).

Next, line a low baking dish (a large Tupperware container can also work) with parchment paper.

Add the sticky paste to the dry ingredients and knead it together well with your hands.

Then, spread this mixture onto the parchment paper and press it down firmly with the bottom of a spoon. Make sure the mixture remains about 1 (to 1.5) cm thick.

Place the baking dish in the refrigerator for at least 1 hour. This will ensure that the granola bars stay firm.

Afterwards, you can use a sharp knife to cut about 10 blueberry granola bars from the compressed mixture.

Store in a sealed container and the bars will stay delicious for several days!
