Green apple muffins

These homemade muffins are high in protein, entirely plant-based, and incredibly delicious. The fresh flavor of green apple makes these muffins a perfect fit for the summertime.

Ingredients (12 pieces)

  • 1/2 green apple
  • 250 ml coconut milk
  • 1 banana
  • 1 1/2 scoops of Orangefit Protein
  • 2 tbsp lime juice
  • 200g oat flour
  • 60 grams mixed unsalted nuts
  • 250 ml plant-based milk
  • 1 tsp agave syrup
  • Coconut oil

Instructions

1. Preheat the oven to 180 degrees. 

2. Mix the banana with coconut milk, protein powder, plant-based milk, agave syrup, oat flour, and lime juice. Ensure it's well blended.

3. Chop the nuts into small pieces and fold them into the batter.

4. Cut the green apple, including the peel, into small pieces and mix them into the batter.

5. Grease the muffin molds with coconut oil and fill them about 3/4 full with the muffin batter.

6. Place the muffin tray in the oven for 25 minutes.

7. Cover the muffins with aluminum foil after 25 minutes and bake for an additional 10 to 15 minutes.
