Healthy carrot cake

Ingredients

  • 200 grams of oat flour
  • 50 grams of almond flour
  • 1 tbsp of coconut blossom sugar
  • 1 1/2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 350 ml of unsweetened almond milk
  • 2 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • A pinch of salt
  • 1 large apple
  • 2 scoops of Orangefit Protein vanilla flavor
  • 200 grams of grated carrot
  • 30 grams of melted coconut oil

For the topping:

  • 150 grams of unsalted cashews
  • 3 dates
  • A pinch of cinnamon
  • A pinch of nutmeg
  • 2 tbsp of lemon juice
  • 100 ml of unsweetened almond milk
  • Optional: 1 tsp of vanilla

Tip: Soak the cashews in cold water for about 4 hours.

Instructions

1. Preheat the oven to 180 degrees Celsius.

2. Cut the apple into pieces and bake it in the oven for 15 minutes.

3. Then, blend it together with the melted coconut oil in a food processor until smooth.

4. Mix the dry ingredients in a large bowl and then add the applesauce, grated carrot, and almond milk to it. Stir this mixture well.

5. Line a cake tin with parchment paper, pour the batter into it, and place it in the oven for 50 to 60 minutes.

6. Check if the cake is done by inserting a skewer. If there's almost no batter sticking to the skewer, you can remove the cake from the oven.

7. For the frosting, blend all the ingredients together in a food processor or at high speed for 1 minute. Scrape any remaining bits from the sides of the food processor to ensure everything is well mixed. Place this in the refrigerator for about half an hour to firm up.

8. Allow the carrot cake to cool completely before spreading the frosting on top.

9. Spoon and spread the frosting evenly over the healthy carrot cake.

10. Finish with some extra cinnamon, nutmeg, pieces of nuts, or grated carrot.

11. Store in the refrigerator.
