Vegan protein oreo

Instructions
- Preheat the oven to 190 degrees Celsius (374 degrees Fahrenheit).
- Mix the ingredients for the cookies in a food processor until you have a firm dough.
- Divide the dough into 12 small balls.
- Flatten the balls on the bottom of muffin cups (this will create the ridges on the cookies).
- Place the muffin cups in a muffin tin.
- Put the muffin tin in the oven and bake the cookies for 10-15 minutes.
- They will still feel soft at first but will harden as they cool.
- Once the cookies have cooled, you can proceed with the filling.
- Mix the ingredients for the filling together.
- If your mixture is too crumbly, add a bit of water.
- Make 6 balls from the filling.
- Roll out the balls over 6 of the halves of your cookies and sandwich them with the other halves.
