Zucchini Brownies

These zucchini brownies are delicious as a healthy snack in between meals.

Of course, you can also use these brownies as a dessert. They go well with some baked fruit or a scoop of cinnamon ice cream. Or take a piece of brownie with you as a post-workout snack. The possibilities are endless.

Thanks to the healthy ingredients, these zucchini brownies are also much more nutritious and healthier than the ready-made versions you find in the supermarket. So, you can enjoy this snack with peace of mind.

Ingredients

  • 200 grams of zucchini
  • 100 grams of pitted dates
  • 1 ripe banana
  • 1 scoop of Orangefit Chocolate Protein
  • 2 tablespoons of melted coconut oil
  • 3 tablespoons of unsweetened cocoa powder
  • 100 grams of oat flour
  • 1 teaspoon of baking powder
  • 1 tablespoon of ground flaxseed (mixed with 3 tablespoons of water)
  • 60 grams of mixed unsalted nuts
  • 1 teaspoon of cinnamon
  • Pinch of salt
  • 1 tablespoon of agave syrup (optional)

Instructions

  1. Preheat the oven to 180 degrees Celsius.
  2. Cut the dates (without pits) into 2 pieces and let them soak in hot water for about 10 minutes. This will make the dates softer.
  3. Add 3 tablespoons of water to the ground flaxseed and let it sit for 10 minutes as well.
  4. Wash the zucchini and grate it (you don't need to remove the skin) and mash the banana.
  5. Drain the dates and add them, along with the rest of the ingredients (including the flaxseed), to the zucchini and mashed banana in the bowl of a food processor.
  6. Blend everything until you have a smooth batter.
  7. Use a large knife (be careful) to chop the raw nuts into small pieces and fold them manually into the batter. TIP: Save a small amount to sprinkle over the top of the brownies.
  8. Grease a (brownie) baking dish with some coconut oil or line it with parchment paper.
  9. Pour the batter into it and spread it out in the dish. Make sure the batter is at least 1 cm thick.
  10. Crumble some more pieces of nut on top.
  11. Place the baking dish in the preheated oven for about 40 minutes. Tip: You can check if the brownies are done by inserting a skewer. If a lot of batter sticks to the skewer, the brownies need a bit more time in the oven.
  12. Repeat this if necessary for a few more minutes at a time.
  13. Then, remove the baking dish from the oven and let it cool for a little while.
